My love and interest in great food and flavor combinations was encouraged while working as a cook and lead in menu development within Winter Park and Orlando restaurants over the last 15+ years. This led down the path to an interest in preserves. Being a Florida native – I enjoy the hot weather, extended growing seasons, and loads of fruit varietals available to us. I began making jams and jellies for friends and family and graciously received numerous compliments to take the next step with the jam biz.
I believe all good foods start with good ingredients – which is why I focus on only clean, basic ingredients. Just good food, no additives and concentrates. In addition to using fruit from local farms, this DAMN GOOD JAM utilizes less sugar than most commercial jams plus does not include any chemical or added natural pectin. Instead, all Smiling Goat Jams have a longer cook time which pulls out all the natural sugars to intensify the jam flavor.
What to eat with jam? Everything. Jam is great with sweet and savory dishes, at daytime and nighttime, with food and cocktails – basically everything consumable.
In addition to jams, I now offer a line of shrubs – drinking vinegars. Shrubs are concentrated drinking vinegars used in cocktails, used to mix with soda water to create a tasty (and healthy) non-alcoholic beverage, or used for marinating and cooking. These FINEST OF SHRUBS are made with the same dedication, detail, and ideals as the jams.
So whether it be a jam or a shrub – both are great to jazz up your next cocktail or meal.
This jam incorporates a blend of Florida citrus, local honey, and dry brut sparkling wine. Each batch is slightly varied depending on what varietals of citrus were available at the citrus farm that week. It is hard to not eat this jam with a spoon straight out of the jar. Plus it is a perfect match with gin.
Sweet golden pineapple flavor with the spice of fresh ginger and basil. This jam was made for a tiki cocktail.
Sweet strawberries complimented with floral notes of rose water. This jam is both delicate and balance and just all around pretty.
Sweet Florida strawberries matched with a perfect balance of jalapenos – little bit of spicy and fresh jalapeno flavor balanced with sweet strawberries. Amazing with mezcal.

This is a nice twist on a classic fall flavor combination. This jam is a play on apple cinnamon flavors – with the chai tea offering all those familiar flavors of baking spices plus black tea to balance out the spice. The pears offer a more fragrant and floral substitute to the apple.
Sweet fragrant flavor of pear matched with the zesty spice of fresh ginger. This aromatic jam is a refreshing balance of sweet and spicy.
Great balance of tart pomegranates with the candy sweetness of apples. Pomegranate seeds in the jam add a nice crunch and texture to each bite.
Savory honeyed flavor of fuyu persimmons enhanced with cardamom and sage. This quintessential fall flavor is both rich and delicate in flavor.
Fall is all about squash so why not make a calabaza squash jam. Florida oranges add a juicy and zesty characteristic that is complimented by the calabaza squash and orange blossom honey.
Instead of cranberry relish or cranberry sauce – enjoy some cranberry jam. Florida oranges offer a juicy sweet balance to the wonderfully tart cranberries.
Shrubs are concentrated drinking vinegars. These vinegars can be used to enhance a cocktail, added to sparkling wine for a mimosa alternative, or mixed with club soda to create a non-alcoholic shrub soda. (Shrubs also have a great application in the kitchen as a vinaigrette or a marinade. )
Vinegar in cocktails basically has the same effect salt does in food – it enhances the flavors. As for shrub sodas – these are a healthy (and more flavorful) alternative to a regular soda pop and provides you with an exciting non-alcoholic drink. Depending on your preference – only 0.5 to 2 oz are needed per beverage.
No more need for a boring beverage.
Who doesn’t love strawberries & champagne? With this shrub you can enjoy that perfect combo anytime you like. Aromas of pink peppercorn are met with flavors of sweet strawberry and pleasantly tart champagne vinegar. Enjoy this shrub with soda water for a delicious refreshment or kick it up a notch with a little bourbon. Drink it anyway you like but be sure to drink it with pride.
Citrus, local honey, juniper, coriander, and chamomile provide a perfect blend that creates a flavor packed experience with this shrub. The St. Augustine native pepper, the Datil pepper, provides a perfectly pleasant spice to this refreshing cucumber shrub. The fresh cooling cucumber flavor and the subtle Datil pepper spice on the nose and finish are brought together with the crisp flavor of the rice wine vinegar. Perfect for a spicy margarita!

The sweet pineapple and golden kiwi combined with grapefruit and lime is complimented with the aromatic flavors of ginger, basil, and allspice. Lastly, coconut vinegar and champagne vinegar bind all the flavors together. This shrub pairs with any spirit of your choice and is just as tasty as a shrub soda.
